Cellar and varietals

Our wines start with a meticulous selection in the vineyard during the harvest with trained personnel who bring only the best bunches to the cellar already cleaned of any imperfect grapes. This gives us the possibility to make wine in the most natural way possible, to produce balanced, harmonious wines with great potential, following them with sensitivity and taste in all their details.

 

Our cellar is located in Antonio Cerri's old house, where he made his wines for decades. In 2021, we expanded the cellar with a new underground structure to make room for the large barrels (20hl-80hl) for ageing, adapted the old structure for vinification and left Cerri's historic cellar with its 12-23hl barrels unchanged.

 

The cellar is simple with little technology, an artisanal production where time does not count in order to arrive at expressive wines that recall the origin - the grape. Our credo is: nothing to take away and nothing to add, but very close to the product.

 

Boca Doc (Nebbiolo and Vespolina) grapes are harvested vineyard by vineyard, we use the old techniques of Cerri and the great producers of the Langhe. The de-stemmed grapes are crushed and placed in wooden vats (30-45hl) where they ferment without the addition of yeasts, manual punching-down, followed by a maceration period of 50-60 days. During racking, the flower wine and the press wine (vertical press) are put directly into large casks where they undergo malolactic fermentation in the spring, a few racking, and remain in the casks for 3 to 5 years (depending on the vintage) until bottling without filtration or clarification.

 

Mimmo (Nebbiolo, Vespolina and Croatina) 2 years in large barrels, vinification has the same procedure as Boca Doc

 

Piane (Croatina) from old vineyards (100 years old) in Maggiorina. The grapes, only the best, are selected and harvested when fully ripe, in the vinification short macerations, the first year in 500-litre tonneau, the second in large casks.
